  • 4 cups shredded zucchini
  • 1 pound ground beef
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups pizza sauce
  • 1/2 cup chopped onion
  • 1 green bell pepper, chopped
  • 1/2 cup sliced mushrooms
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix shredded zucchini with salt and let it sit for 10 minutes. Squeeze out excess moisture using a kitchen towel.
  3. Combine drained zucchini with eggs, Parmesan, and half the mozzarella in the same bowl.
  4. Grease a baking dish and press the zucchini mixture into an even layer as the crust.
  5. Bake for 20 minutes until set and lightly browned.
  6. Brown ground beef with chopped onion in a skillet until cooked through; drain excess fat.
  7. Stir in pizza sauce and vegetables; cook for another 5 minutes.
  8. Spread the beef mixture over the baked crust and top with remaining mozzarella.
  9. Bake again for 20 minutes until cheese is melted and bubbly.
  10. Let cool for a few minutes before slicing and serving.
