  • 14 small tortillas
  • 1 Tbsp light butter
  • 1.5 Tbsp flour
  • 1/2 cup milk
  • 1/4 cup light sour cream
  • 1/2 cup chicken broth
  • 1 Tbsp chopped canned green chilies
  • Dash of salt & pepper
  • 1/4 tsp cumin
  • 1/4 tsp chili powder
  • 2 cups cooked shredded chicken
  • 3/4 cup frozen corn
  • Diced green onion
  • 3.5 oz shredded reduced-fat mozzarella cheese

Instructions

  1. Melt butter in a pan over medium heat. Stir in flour to form a paste.
  2. Whisk in milk until smooth; add sour cream and broth and cook until thickened.
  3. Preheat oven to 400°F (200°C); line a baking sheet with parchment paper.
  4. In a bowl, mix shredded chicken, corn, and green onion with the cream sauce.
  5. Heat tortillas one at a time in a frying pan; warm both sides for about 20 seconds.
  6. Fill each tortilla with approximately 2 tablespoons of the chicken mixture and top with cheese before folding.
  7. Place filled tacos on the baking sheet and spray lightly before baking for about 12 minutes or until golden.
