  • 3 and 1/2 cups (406 grams) all-purpose flour, divided
  • (1) 0.25 oz package rapid rise yeast
  • 3 tablespoons (35 grams) granulated sugar
  • 1/2 teaspoon salt
  • 1 large egg, at room temperature
  • 1 cup (213 grams) light brown sugar
  • 1/2 Tablespoon ground cinnamon
  • 1/2 cup (113 grams) unsalted butter, VERY soft
  • 1 cup (114 grams) powdered sugar, plus more if needed
  • 1 teaspoon almond extract
  • 1 to 2 Tablespoons milk, as needed
  • 1/2 cup (50 grams) slivered almonds, toasted

Instructions

  1. In a large bowl, mix warm milk, softened butter, and almond extract until combined. Add half of the flour with yeast, sugar, salt, and egg; stir until mixed. Gradually add remaining flour to form a soft dough.
  2. Knead on a floured surface for 5–7 minutes until smooth. Place in a greased bowl, cover, and let rise until doubled (about 60 minutes).
  3. Prepare filling by combining brown sugar and cinnamon. Roll out dough into a rectangle, spread with softened butter, and sprinkle with cinnamon-sugar mixture.
  4. Roll tightly from one edge into a log; cut into 12 slices and place cut side up on lined baking sheet.
  5. Cover rolls lightly and let rise again until puffy (about 30 minutes). Preheat oven to 350°F (175°C) and bake for about 20 minutes until golden.
  6. Whisk together powdered sugar, almond extract, and milk for glaze consistency. Drizzle over warm rolls and top with slivered almonds before serving.
