Ingredients

Scale
  • 6 tablespoons salted butter (softened)
  • 3/4 cup brown sugar (packed)
  • 1 and 1/2 tablespoons cinnamon
  • 1 cup salted butter (2 sticks, softened)
  • 1 and 2/3 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 and 1/2 cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 and 1/2 teaspoons cream of tartar
  • 1/3 cup granulated sugar (for rolling)
  • 1 and 1/2 tablespoons cinnamon (for rolling)

Instructions

  1. Make the Filling: In a large bowl or stand mixer, beat together softened butter, brown sugar, and cinnamon until smooth. Freeze small balls of this filling on a lined baking sheet for about 20 minutes.
  2. Preheat Oven: Set your oven to 350°F (175°C) and prepare additional baking sheets with parchment paper.
  3. Prepare the Dough: In the same bowl, cream together the softened butter and granulated sugar until light and fluffy. Mix in eggs and vanilla extract until combined.
  4. Combine Dry Ingredients: Gradually add flour, baking soda, salt, and cream of tartar; mix gently until just combined.
  5. Add Filling: Fold the frozen cinnamon filling into the dough carefully with a spatula.
  6. Shape Cookies: Use a cookie scoop to form balls about 2 inches across. Roll them in a mixture of granulated sugar and cinnamon.
  7. Bake: Place on baking sheets with space between each cookie; bake for about 11-12 minutes until edges are firm but centers are still soft.
  8. Cool & Enjoy: Let cookies set on the pan before transferring to wire racks to cool.
