  • 170g unsalted butter
  • 300g granulated sugar
  • 80g Dutch process cocoa powder
  • 2 egg yolks and 1 whole egg
  • 1 tsp pure vanilla extract
  • ½ tsp fine sea salt
  • 100g sourdough discard (unfed starter)
  • 65g all-purpose flour
  • 120g finely chopped semi-sweet or dark chocolate (optional)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a 9-inch square pan with parchment paper.
  2. Melt the butter in a heatproof bowl in the microwave until partially melted.
  3. Stir in granulated sugar, return to the microwave until fully melted, then whisk in cocoa powder.
  4. Add egg yolks, whole egg, vanilla, and salt; mix until smooth.
  5. Gently fold in sourdough discard and flour until just combined; add chopped chocolate if desired.
  6. Pour batter into the prepared pan and bake for about 40 minutes or until the top is matte and slightly puffed.
