  • ¾ cup unsalted butter
  • 1 ½ cups granulated sugar
  • ¾ cup Dutch process cocoa
  • 2 egg yolks plus 1 whole egg
  • 1 tsp pure vanilla extract
  • ½ tsp fine sea salt
  • 100g sourdough discard (unfed starter)
  • ½ cup all-purpose flour
  • Optional: 120g semi-sweet or dark chocolate (finely chopped)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a 9-inch square baking pan with parchment paper.
  2. Melt the butter in a heatproof bowl; first in the microwave for one minute, then add sugar and whisk before microwaving again until fully melted.
  3. Stir in cocoa until well combined, then mix in eggs, vanilla extract, and salt using a hand mixer for about two minutes.
  4. Gently fold in the sourdough discard and flour until just combined; if desired, add finely chopped chocolate.
  5. Pour the batter into the prepared pan and bake for approximately 40 minutes until the top is matte and puffed. Allow cooling before slicing.
