- 1/2 cup butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup + 2 tablespoons peanut butter
- 1 large egg
- 1 & 1/2 teaspoons vanilla extract
- 1 & 1/3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon kosher salt
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- Beat the butter until creamy, then add sugars and mix until fluffy.
- Stir in peanut butter, egg, and vanilla until combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt; gradually add to wet ingredients.
- Chill the dough for at least 15 minutes.
- Scoop out dough balls (about 1 & 1/2 inches) and roll in sugar.
- Place on prepared sheets, press down with a fork for crisscross marks.
- Bake for 10–12 minutes; cool before serving.
