  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup + 2 tablespoons peanut butter
  • 1 large egg
  • 1 & 1/2 teaspoons vanilla extract
  • 1 & 1/3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. Beat the butter until creamy, then add sugars and mix until fluffy.
  3. Stir in peanut butter, egg, and vanilla until combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt; gradually add to wet ingredients.
  5. Chill the dough for at least 15 minutes.
  6. Scoop out dough balls (about 1 & 1/2 inches) and roll in sugar.
  7. Place on prepared sheets, press down with a fork for crisscross marks.
  8. Bake for 10–12 minutes; cool before serving.
