  • 1 cup vegetable broth (or beef stock)
  • 1 10-ounce can Rotel diced tomatoes
  • 16 ounces dry penne pasta (plus water and salt to cook pasta)
  • 4 ounces cream cheese (softened)
  • Salt (to taste)
  • Freshly cracked black pepper (to taste)
  • Fresh chopped parsley (optional, to garnish)

Instructions
