  • 1 Tbsp avocado oil (or other neutral oil)
  • 1/4 cup fruit juice (mirin alternative)
  • 1 Tbsp miso paste (white or yellow variety)
  • 1 Tbsp rice vinegar
  • 1 Tbsp pure maple syrup

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss broccoli florets on a baking sheet with avocado oil. Season with salt and pepper if desired.
  3. Roast in the oven for about 20 minutes until lightly charred and tender.
  4. While roasting, prepare the miso sauce: Heat fruit juice in a small saucepan over medium-high heat until boiling for about 1 minute to evaporate any alcohol.
  5. Reduce heat to medium-low; add miso paste and whisk until dissolved.
  6. Incorporate rice vinegar and maple syrup; bring back to a boil while whisking continuously until smooth.
  7. Once the broccoli is done, transfer to a bowl and drizzle the miso sauce over it; toss gently to coat.
