  • 226 g creamy peanut butter
  • 200 g brown sugar
  • 200 g granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tsp baking soda
  • 405 g all-purpose flour
  • 113 g creamy peanut butter (for filling)
  • 240 g powdered sugar
  • 1 tsp vanilla extract (for filling)
  • 57 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the unsalted butter, shortening, brown sugar, and granulated sugar until smooth.
  3. Beat in the creamy peanut butter and eggs one by one, mixing well after each addition. Add vanilla extract.
  4. Stir in salt and baking soda, then gradually mix in the all-purpose flour until just combined.
  5. Drop spoonfuls of dough onto lined baking sheets, spacing them about 2 inches apart.
  6. Bake for 8 minutes or until the edges are golden but centers remain soft.
  7. While cooling the cookies, prepare the filling by mixing peanut butter, powdered sugar, vanilla extract, and milk to achieve desired consistency.
  8. Once cooled, spread filling on half of the cookies and top with remaining cookies to make sandwiches.
