  • 1 cup Brown sugar (packed light or dark)
  • 1/2 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 1/2 TBSP Molasses (don't use blackstrap)
  • 2 Large eggs (room temperature)
  • 1 3/4 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1 tsp Ground cinnamon
  • 1/2 tsp Pumpkin pie spice (or use nutmeg)
  • 3 cups Old fashioned oats
  • 1 cup Unsalted butter (room temperature)
  • 7 oz vegan marshmallows fluff/cream
  • 1 cup Powdered sugar (sifted)
  • 1 tsp Pure vanilla extract
  • 1/4 tsp Salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together unsalted butter, brown sugar, and white granulated sugar until light and fluffy.
  3. Add in pure vanilla extract and molasses; mix well.
  4. Beat in eggs one at a time until fully incorporated.
  5. In another bowl, combine all-purpose flour, baking soda, salt, ground cinnamon, and pumpkin pie spice; mix thoroughly.
  6. Gradually add dry ingredients into the wet mixture until just combined.
  7. Fold in old-fashioned oats until evenly distributed.
  8. On a lined baking sheet, drop tablespoon-sized balls of dough, leaving space between each cookie.
  9. Bake for about 10 minutes or until edges are lightly golden but centers remain soft.
  10. Remove from oven and allow cookies to cool completely on wire racks.
  11. In a mixing bowl, beat together unsalted butter, vegan marshmallows fluff/cream, powdered sugar, pure vanilla extract, and salt until smooth and creamy.
  12. Take one cookie and spread a generous amount of cream filling on the underside.
  13. Top with another cookie to create a sandwich.
  14. Repeat until all cookies are filled.
