Ingredients

Scale
  • 1 cup unsalted butter, cold
  • 1 ½ cups light brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 ½ cups rolled oats
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 1 ½ cups dried cranberries
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Soften the cold butter briefly in the microwave and then combine it with the brown and granulated sugars in a mixing bowl. Beat until fluffy, about 2-3 minutes.
  3. Add eggs and vanilla extract to the mixture, beating until well mixed.
  4. In a separate bowl, combine flour, oats, cinnamon, salt, and baking soda. Gradually add this dry mixture to the wet ingredients on low speed until just combined.
  5. Gently fold in dried cranberries and white chocolate chips until evenly distributed.
  6. Scoop dough onto the prepared baking sheet, spacing them about 2 inches apart, and bake for 11-13 minutes. Let them cool for a few minutes before transferring to a wire rack.
