  • 1 can condensed cream of chicken soup
  • 8 oz cream cheese, softened
  • ¼ cup mayonnaise
  • 2 cups shredded cheddar cheese (divided)
  • 2 lbs boneless skinless chicken, cubed
  • 1 bunch green onions, sliced (divided)
  • 3 oz crushed Ritz crackers
  • 2 tbsp melted butter

Instructions

  1. Preheat the oven to 350°F.
  2. Coat a 9×13 inch casserole dish with nonstick cooking spray.
  3. In a large bowl, combine the cream of chicken soup, cream cheese, mayonnaise, and 1½ cups cheddar cheese; mix until smooth.
  4. Stir in garlic powder, onion powder, black pepper, cubed chicken, half of the bacon, and half of the green onions.
  5. Pour into the prepared dish and bake uncovered for 40 minutes.
  6. While baking, mix crushed crackers with melted butter.
  7. After initial baking, gently stir casserole; top with remaining cheddar cheese and cracker mixture.
  8. Bake for an additional 20 minutes until golden brown. Let cool for 5-10 minutes before serving.
