  • 1/4 cup powdered sugar
  • 1/4 cup maple sugar
  • 1 tablespoon pure maple syrup
  • 1 teaspoon maple extract
  • 1 1/2 cups all-purpose flour
  • 3 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter (room temperature) for filling
  • 1 cup powdered sugar for filling
  • 1 tablespoon pure maple syrup for filling
  • 1/2 teaspoon vanilla extract for filling
  • 1/2 teaspoon maple extract for filling
  • 1/4 teaspoon salt for filling

Instructions

  1. Preheat the oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a stand mixer, beat the room temperature butter with maple sugar until slightly grainy. Add powdered sugar and mix until fluffy.
  3. Incorporate maple syrup and extract; mix until combined.
  4. In a separate bowl, whisk flour, cornstarch, and salt together. Gradually add to the wet mixture until dough forms.
  5. Chill the dough wrapped in plastic for at least 30 minutes.
  6. Roll out chilled dough to about 1/8" thick on a floured surface. Cut out shapes using a maple leaf cookie cutter.
  7. Bake cookies for 8–10 minutes until edges are lightly golden brown; cool on wire racks.
  8. For the filling, beat together ingredients until smooth and creamy.
  9. Assemble cookies by spreading filling between two cookies.
