  • 2 cups baby spinach leaves
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ cup grated parmesan cheese

Instructions

  1. Boil salted water in a medium saucepan and cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, warm olive oil and sauté minced garlic for about 30 seconds without browning. Add ricotta cheese and stir over low heat until melted. Whisk in reserved pasta water.
  3. Incorporate lemon zest and juice; season with salt and pepper, adding parmesan cheese. Cook for an additional minute before adding spinach, stirring until wilted.
  4. Combine hot drained pasta with the sauce in the skillet, tossing with kitchen tongs until well coated. Adjust consistency with more pasta water if necessary.
  5. Serve immediately, garnished with extra parmesan and lemon zest if desired.
