  • ¼ cup brown sugar
  • ½ cup all-purpose flour
  • ½ cup rolled oats
  • ¼ teaspoon kosher salt
  • ¾ cup fig preserves
  • 12 oz. cream cheese (softened)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon lemon zest (about 1 large lemon)
  • 2 tablespoons freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix softened butter, brown sugar, flour, rolled oats, and salt until crumbly. Press into a greased 9×9 inch pan.
  3. Bake the crust for 10 minutes until lightly golden.
  4. In another bowl, beat cream cheese, granulated sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition. Stir in lemon zest and juice.
  5. Spread fig preserves over the baked crust and pour cheesecake filling on top. Bake for an additional 35-40 minutes or until set.
  6. Allow to cool completely before slicing into bars.
