  • ¾ cup granulated sugar
  • 1 egg yolk
  • 1 teaspoon pure vanilla extract
  • 2 ounces unsalted butter, at room temperature (for filling)
  • ¼ cup vegetable shortening (for filling)
  • 2 cups sifted confectioners' sugar (for filling)
  • 2 teaspoons vanilla extract (for filling)

Instructions

  1. Whisk together flour, cocoa powder, baking powder, and salt in a bowl.
  2. In a stand mixer, beat softened butter and granulated sugar until pale and fluffy. Add egg yolk and vanilla extract; mix well.
  3. Gradually incorporate the dry ingredients until a dough forms. Divide into two pieces, shape into squares, wrap in plastic wrap, and chill for 2–3 hours.
  4. Preheat oven to 350°F (175°C). Roll out one piece of dough between parchment paper into a rectangle about 1/8 inch thick and freeze until firm (about 10 minutes). Repeat with remaining dough.
  5. Cut out rounds using a fluted or round cutter and place on prepared baking sheets. Bake for 10–12 minutes until slightly puffed and firm. Let cool completely.
  6. For the filling: Beat butter and shortening until smooth; gradually add confectioners' sugar and vanilla extract, mixing until fluffy.
  7. Assemble by piping filling onto one cookie and sandwiching it with another.
