  • 2 tablespoons bread flour
  • 2 cups bread flour
  • 3/4 teaspoon instant yeast
  • 2 tablespoons + 1 teaspoon granulated sugar
  • 1/2 teaspoon fine sea salt
  • 5 tablespoons unsalted butter (room temperature)
  • 1 cup dark brown sugar (packed)
  • 1 ½ tablespoons ground cinnamon
  • 2 ounces softened cream cheese
  • 2/3 cup powdered sugar

Instructions

  1. Prepare the tangzhong by whisking together water and bread flour in a saucepan over medium heat until a paste forms. Set aside to cool.
  2. In a stand mixer bowl, combine remaining bread flour, sugar, yeast, and salt. Add cream, milk, egg, vanilla bean paste, and cooled tangzhong; knead on low speed until rough dough forms.
  3. Gradually add softened butter while mixing; continue kneading until smooth and elastic.
  4. Shape dough into a ball and let it rest covered for 30 minutes.
  5. Roll out the dough into a square; prepare cinnamon sugar mixture with melted butter, brown sugar, cinnamon, and vanilla.
  6. Brush half of the mixture over the dough; cut into strips, twist them together gently, then place on parchment-lined trays.
  7. Brush remaining filling over twists; cover and let rise for about 1–2 hours.
  8. Preheat oven to 375°F (190°C) and bake twists for about 9–12 minutes or until lightly golden.
  9. While baking, make the cream cheese icing by combining softened cream cheese with powdered sugar; whisk in milk and vanilla until smooth.
  10. Drizzle icing over warm twists before serving.
