  • 6 large eggs
  • ½ cup cheddar cheese (shredded)
  • 4 tablespoons scallions (finely chopped)
  • 2 tablespoons all-purpose flour
  • ½ teaspoon baking powder (gluten-free if required)
  • â…“ teaspoon fine sea salt
  • Pepper to taste

Instructions

  1. Preheat your oven to 350F/180C/160 fan/gas mark 4. Grease a 6-hole muffin pan with butter or cooking spray.
  2. In a large mixing bowl, whisk together the eggs until smooth.
  3. Add the cottage cheese, cheddar cheese, scallions, salt, and pepper; mix until well combined.
  4. Sift in the flour and baking powder, stirring gently until just combined.
  5. Spoon the batter evenly into each muffin hole.
