  • 25 grams sourdough starter, leftover
  • 100 grams water
  • 400 grams bread flour
  • 200 grams sourdough starter, active
  • 150 grams whole milk
  • 75 grams butter, softened
  • 50 grams brown sugar (for the dough)
  • 100 grams butter, softened (for the filling)
  • 100 grams brown sugar (for the filling)
  • 5 grams cinnamon (2 tsp)
  • 50 grams eggs

Instructions

  1. Prepare the starter by mixing 25g of sourdough starter with 100g water and 100g bread flour. Let it rise overnight.
  2. In a bowl, combine whole milk, active starter, softened butter, brown sugar, egg, and salt. Mix well before adding remaining bread flour.
  3. Knead the dough until smooth (8-10 minutes) and let rise at room temperature for 4-8 hours until doubled.
  4. Chill the dough for about 15-30 minutes before rolling it out into an 18"x12" rectangle.
  5. Spread the cinnamon-sugar filling and roll tightly into a cylinder; slice into nine pieces.
  6. Let rolls proof before baking at 350°F (180°C) for about 35 minutes until golden brown.
