  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • â…“ cup mayonnaise
  • â…“ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. Prepare the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, Dijon mustard, garlic, and salt in a bowl. Set aside.
  2. In a large pot, bring water to a boil; add shrimp and cook for about 2-3 minutes until pink.
  3. Transfer cooked shrimp to an ice water bath to cool for 3 minutes. Drain and chop into bite-sized pieces.
  4. In a clean mixing bowl, combine chopped shrimp, diced cucumber, and sliced green onions. Pour in the dressing and mix well until everything is coated.
