  • 2 whole heads garlic
  • 2 tbsp olive oil
  • 30 g butter (cubed)
  • 1/2 tsp pepper
  • 1 cup cream (single or heavy)
  • 23 tbsp freshly squeezed lemon juice
  • Zest of one lemon
  • 50 g parmesan cheese (finely grated)
  • Pasta of your choice

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Prepare garlic heads by removing outer layers and cutting off the tops.
  3. Drizzle with olive oil, wrap in foil, and roast for about 45 minutes until soft.
  4. Squeeze out the roasted garlic into a bowl and mash into a paste.
  5. Cook pasta according to package instructions in well-salted water.
  6. In a frying pan, melt butter over medium heat, add pepper, then whisk in garlic paste.
  7. Pour in cream while stirring continuously and let simmer gently.
  8. Mix in lemon juice and zest, then gradually add parmesan until melted.
  9. Combine cooked pasta with sauce, adding reserved pasta water as needed for desired consistency.
