  • 2 pounds chicken tenderloins
  • 1/2 medium onion (diced)
  • 3 garlic cloves (minced)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 2 teaspoons dried Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sliced roasted red peppers
  • 1/2 cup sliced pepperoncini peppers
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  1. Heat the butter and olive oil in a large cast iron skillet over medium-high heat. Season the chicken tenderloins with salt and pepper, then add them to the skillet. Cook until golden brown on both sides; remove and set aside.
  2. In the same skillet, add the diced onion and cook for about 3 minutes until softened. Add minced garlic and cook for an additional 2 minutes.
  3. Pour in the chicken broth and reduce by half. Stir in the heavy cream and Italian seasoning, then return the chicken to the skillet and simmer until cooked through.
  4. Lower the heat to medium-low and mix in Parmesan cheese, roasted red peppers, pepperoncini peppers, and crushed red pepper flakes until well combined.
  5. Adjust seasoning with salt and pepper before serving.
