  • 8 oz uncooked pasta (Penne recommended)
  • 1.5 lbs chicken breast
  • 3 tablespoons flour
  • 0.75 tsp kosher salt
  • fresh cracked pepper
  • 1 shallot
  • 8 oz mushrooms (sliced)
  • 3 cloves garlic
  • 1 cup Marsala apple vinegar
  • 1 cup reduced-sodium chicken broth
  • 1/2 cup skim milk (or almond/cashew milk)
  • 2 tbsp reduced-fat cream cheese
  • fresh parsley (optional)

Instructions

  1. Cook pasta in boiling salted water according to package instructions; set aside.
  2. Cube chicken, coat with flour, salt, and pepper.
  3. Sear chicken in a heated frying pan until golden brown; remove and set aside.
  4. Sauté shallots and mushrooms in the same pan until softened; add garlic.
  5. Deglaze with apple vinegar and chicken broth; return chicken to the pan and simmer for 10 minutes.
  6. Mix milk with flour; stir into the pan along with cream cheese until smooth.
  7. Toss in cooked pasta; heat briefly before serving.
