  • 1 cup heavy cream (or a lighter alternative)
  • 1 cup chicken broth or vegetable broth
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook pasta in salted boiling water until al dente; drain and set aside.
  2. In a skillet, heat olive oil over medium heat and sauté sliced bell pepper for 3-4 minutes.
  3. Add minced garlic and cook until fragrant; then add chicken seasoned with salt, pepper, and Cajun seasoning. Sauté until cooked through.
  4. Remove chicken mixture from the skillet; in the same pan, combine chicken broth and heavy cream, simmering gently.
  5. Stir in Parmesan cheese until melted; add reserved pasta water if needed for consistency.
  6. Return pasta and chicken mixture to skillet; toss well to coat in sauce.
