  • 8 oz penne pasta
  • 4 teaspoons Cajun seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 ½ lbs boneless skinless chicken breast cut into 1" pieces
  • 3 Tablespoons salted butter
  • ½ yellow onion diced
  • 2 bell peppers sliced
  • 1 ½ cups heavy cream
  • ¾ teaspoon smoked paprika
  • ½ teaspoon dried basil
  • ¼ teaspoon garlic powder
  • â…“ cup fresh parmesan cheese

Instructions

  1. Cook the penne pasta according to package instructions until al dente; drain and set aside.
  2. In a large Ziploc bag, mix 3 teaspoons of Cajun seasoning, salt, and pepper. Add chicken pieces and shake to coat evenly.
  3. Melt 2 tablespoons of butter in a large skillet over medium heat. Brown the seasoned chicken until cooked through; remove from the pan.
  4. In the same pan, add remaining butter and sauté sliced peppers and diced onion until softened.
  5. Pour in heavy cream along with smoked paprika, basil, garlic powder, remaining Cajun seasoning, salt, and pepper. Bring to a boil then simmer until thickened.
  6. Return chicken to the pan and stir in parmesan cheese followed by cooked pasta until combined.
