  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple vinegar
  • 2 teaspoons sugar
  • 1 teaspoon dried oregano
  • 1/2 cup olive oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 heads romaine lettuce, chopped
  • 1/2 red onion, chopped
  • 1 can of chickpeas, rinsed
  • 1 pint cherry tomatoes, halved
  • 4 ounces genoa turkey slices, chopped
  • 8 ounces fresh mozzarella, chopped
  • 1/2 cup sliced pepperoncini
  • 1/4 cup sliced roasted red peppers
  • 8–10 fresh basil leaves, chopped

Instructions

  1. To make the dressing: In a jar with a lid, combine lemon juice, Dijon mustard, apple vinegar, sugar, oregano, olive oil, kosher salt, and black pepper. Shake vigorously for about ten seconds until well mixed. Adjust seasoning to taste. The vinaigrette can be made ahead and stored in the fridge for up to one week.
  2. Prepare the salad: In a large mixing bowl, add chopped romaine and drizzle with several tablespoons of dressing. Layer on red onion, chickpeas, cherry tomatoes, mozzarella cheese, pepperoncini, roasted red peppers, and basil leaves. Gently toss to combine. Add more dressing if desired.
  3. Serve: Portion into bowls and enjoy as is or alongside pasta or pizza.
