  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter (softened)
  • 1 1/3 cups granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1/3 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350℉ (180℃) and line cookie sheets with parchment paper.
  2. In a bowl, whisk together flour, cornstarch, baking soda, and salt; set aside.
  3. In another bowl, beat softened butter and sugar until fluffy.
  4. Add an egg, egg yolk, vanilla extract (and almond extract if using) to the butter mixture; mix well.
  5. Gradually blend dry ingredients into wet until fully combined.
