  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil (for chicken)
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 3 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/2 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 12 oz pasta of choice (such as penne or spaghetti)
  • 1/2 cup grated Parmesan cheese
  • Optional: fresh mozzarella pearls for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with olive oil, salt, pepper, and Italian seasoning.
  3. In a large oven-proof skillet over medium heat, sear chicken for about 3-5 minutes on each side until golden brown.
  4. Transfer skillet to the oven and bake for 15-20 minutes or until fully cooked.
  5. While the chicken cooks, combine cherry tomatoes, garlic, basil, balsamic vinegar, and olive oil in a bowl. Season with salt and pepper.
  6. Cook pasta according to package instructions until al dente; drain and set aside.
  7. Once chicken is done, let it rest for a few minutes before slicing.
  8. In a large mixing bowl, combine cooked pasta with half of the bruschetta mixture and half of the Parmesan cheese; toss well.
  9. Plate pasta topped with sliced chicken and remaining bruschetta mixture; add more Parmesan if desired.
  10. Serve immediately garnished with fresh basil.
