  • 1 cup (200g) light or dark brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups (200g) all-purpose flour
  • 2 cups (175g) old-fashioned rolled oats
  • 1 tsp baking soda
  • 1 tsp salt
  • Optional: 1 cup mix-ins (chocolate chips, nuts)

Instructions

  1. Brown the butter until golden and nutty; let it cool to room temperature.
  2. In a bowl, whisk together flour, oats, baking soda, and salt.
  3. In another bowl, mix cooled brown butter, brown sugar, eggs, and vanilla until smooth.
  4. Fold in the dry mixture until just combined; add any mix-ins if desired.
  5. Chill the dough for about 20 minutes in the refrigerator.
  6. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  7. Scoop dough into balls and place them on the prepared sheet; flatten slightly.
  8. Bake large cookies for 12–14 minutes or regular ones for 10–12 minutes until edges are golden.
