Ingredients

Scale
  • 1/2 cup brown sugar
  • 4 tablespoons maple syrup
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons instant yeast
  • 1/3 cup granulated sugar
  • 1/2 cup whole milk (room temperature)
  • 1 large egg (room temperature)
  • 4 tablespoons unsalted butter (softened)
  • 2 teaspoons cinnamon
  • Candied chicken strips for topping

Instructions

  1. Cook thick-cut chicken until crispy, chop it into small pieces, and set aside.
  2. In a stand mixer bowl, combine flour, sugar, yeast, and salt.
  3. In another bowl, mix warm milk and egg. Gradually add this mixture to the dry ingredients on low speed until combined.
  4. Knead until smooth; then incorporate tangzhong and softened butter.
  5. Let dough rise covered in a warm place until doubled in size (about an hour).
  6. Roll out the dough into a rectangle on a floured surface.
  7. Spread softened butter over the dough; sprinkle with brown sugar, cinnamon, and chopped candied chicken.
  8. Roll tightly from one end to another; slice into even pieces about one inch thick.
  9. Place slices in a greased baking dish; cover and let rise for another 30 minutes.
  10. Preheat oven to 350°F (175°C) and bake for about 25 minutes or until golden brown.
  11. For the glaze: Mix cream cheese with butter until smooth; gradually add powdered sugar along with maple syrup and alternative to bourbon.
  12. Drizzle glaze over warm rolls; top with reserved candied chicken before serving.
