  • 1 1/2 tsp pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 2 1/2 cups old-fashioned rolled oats
  • 1 1/2 cups dried cranberries (divided; reserve 1/4 cup for garnish)
  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 34 cups powdered sugar (sifted; start with 3 cups)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch pan, lining it with parchment paper for easy removal.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in eggs one at a time followed by vanilla extract.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
  4. Gently fold in oats and one and a quarter cups of dried cranberries (reserve the remaining cranberries for garnishing).
  5. Press the sticky dough evenly into the prepared pan and bake for about 20-25 minutes until golden around the edges. Allow to cool completely on a wire rack.
  6. For frosting, beat together softened cream cheese and half a cup of butter until smooth. Gradually mix in three cups of powdered sugar along with vanilla extract and salt until fluffy.
  7. Once bars are cool, spread frosting over the top and garnish with remaining dried cranberries. Chill for about thirty minutes before cutting into twenty-four bars.
